Endive & Chia Walnut Salad

 

This twist on the classic endive salad is a light meal that is visually appealing, tasty, and easy to put together. It brings together the tangy flavour of Elan Organic Cranberries, the crunchiness of Elan Organic Chia Walnuts and fresh fruit. Share your recipe images with us!

 

Servings: 4

 

Ingredients:

•  5 endives, cleaned and leaves separated

•  1 bag Elan Organic Cranberries

•  1 bag Elan Organic Chia Walnuts

•  1 tbsp honey

•  1 tsp Dijon mustard

•  3 tbsps walnut oil

• 1 green apple, cored and diced

•  Salt to taste

• Black pepper to taste

 

Method:

 

1. In a mix bowl add every ingredient except endives and mix thoroughly.


2. Layer the endive leaves on a large serving platter and spoon the dressed mix liberally over.
