Amaranth can be enjoyed at any meal, from breakfast porridge to amaranth risotto for dinner. It can also be dry roasted in a hot skillet until it pops. For every 1 cup of amaranth seeds, use 2 ½ cups of liquid and cook for approximately 20 minutes.
